This is a single-edged knife of the Yoshihiro Kamisaku series of single-edged knives for wholesaling and processing fish. We have prepared each size in 15mm increments so that you can use it according to the fish you are wholesaling. The handle is made of wood with a round buffalo handle, and the gusset is polished. The material used is Yasuki Steel White No.2, which is preferred by professional cooks. Please be careful with this material as it rusts easily, especially when stored for long periods of time.
